• 3 mashed bananas
  • 1 cup plant-based drink
  • 3 tbsp chia seeds

  • 5 tbsp coconut oil, ghee, almond butter, or olive oil

  • 1 cup gluten-free oat or buckwheat flour
  • 1 cup almond flour
  • 1 packet baking powder
  • 1 tbsp seed mix (sesame, sunflower, pumpkin) for topping


Preheat the oven to 180ºC (356ºF) while preparing the mixture. Combine 3 mashed bananas, 1 cup of plant-based drink, 3 tbsp of chia seeds, 1 tbsp of flaxseeds, 2 tbsp of sesame seeds, 3 tbsp of raw cacao powder, 6 dates mashed with a bit of plant-based drink or 4 heaped tbsp of coconut flower sugar, 5 tbsp of coconut oil, ghee, almond butter, or olive oil, a pinch of vanilla or cinnamon, 1 cup of gluten-free oat or buckwheat flour, 1 cup of almond flour, and 1 packet of baking powder in a bowl or food processor. Mix well until a homogeneous dough is formed. Grease a rectangular mold with olive oil, pour in the mixture, and sprinkle with a mix of seeds (sesame, sunflower, pumpkin). Bake for 45 minutes or until a toothpick comes out clean. Let it cool for a few minutes before unmolding.
