• 1 chopped onion
  • 2 cloves of garlic
  • 1 bay leaf
  • Turmeric
  • A pinch of cumin
  • 1 cup diced pumpki
  • 10 green beans
  • 1 cup red lentils
  • 3 cups water (more if needed)
  • Olive oil
  • Sea salt
  • Chopped cilantro (for garnish)

Sauté 1 chopped onion with olive oil and spices (bay leaf, turmeric, a pinch of cumin). Once the onion is soft, add the remaining ingredients: 2 cloves of garlic, 1 cup diced pumpkin, 10 green beans, 1 cup red lentils, and 3 cups of water (add more water if necessary during cooking). It's better to start with less water and add more as needed. Cook until the vegetables and lentils are tender. Garnish with chopped cilantro before serving.

This Red Lentil Dal is a wonderful way to enjoy legumes without the typical bloating and gas they can cause.
